Adam Weitsman to spend $1.8 million to renovate The Krebs in Skaneateles

Skaneateles, NY-- The president of Upstate Shredding plans to spend $1.8 million to renovate The Krebs restaurant in Skaneateles.

The amount is more than the $1.05 million Adam Weitsman is paying for the restaurant and two adjacent houses on Genesee Street, a press release from his company said this morning. The houses will be used as staff quarters.

Weitsman and his wife plan to operate the 111-year-old landmark and donate the profits to Onondaga County food banks and other charities.

"We saw The Krebs as a challenge to save what has become an institution in the Finger Lakes Region while invigorating the restaurant into a world-class, sustainable, profitable enterprise with a philanthropic mission," he said.

“Even if the business isn’t profitable, we will donate a minimum of $100,000 a year to feed the hungry and help childre,” Weitsman said in a press release.

Weitsman and his wife Kim are building a home on the northern end of Skaneateles Lake.

Auburn native Phil Romano, who developed Fuddrucker’s and Romano’s Macaroni Grille, is mentoring the Weitsmans through the project.

They’ve hired Gary Robinson, the owner-operator of Rosalie’s Cucina in Skaneateles as general manager of The Krebs.

The new owners plan to retain the restaurant’s seven-course old-fashioned dinners, along with an upscale menu that will use more locally produced vegetables.

The restaurant will remain open through the fall, when it will close to renovate the kitchen, make the restaurant handicapped accessible, and landscape.
